21 LBS

I have shrunk

19 INCHES

My body fat has gone from 40.3% to:

36.6%

Sorry the pics aren't FAB I didn't have anyone to take after pics...but if you look you can really see the changes...except in my arms GRRRRRRRR! I hardly lost anything there!
  • Face smaller
  • Stomach flatter
  • Butt shrunk about 2 sizes
  •  Boobs look HUGE....same bra! -just a smaller body! Even my bra is too big!
  • Hair blonder... does that count?

Week WHAT?

Between my husbands finals, prep for grad, family in from out of town, work, etc.... I have totally forgotten what week I am in!!!!!!!!!!!

seriously I don't know but what I do know is that I am have surpassed my goal of 210 for the challenge!!! I am at 208.4!!!!!!!!!

There are some girls totally rockin this challenge and I think they are ahead of me but seriously I was pushing 300 lbs 9 months ago now I'm teetering on the brink of 200!!! I am totally a winner!

One thing that's disappointing is that I am losing a lot of weight in my mid section but my arms and my legs are virtually the same size so pants are super loose on the waist but tight on legs and same with arms and chest....GRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRR

Tuna Salad Recipe- No bread. TRY THIS!


This Tuna Salad is GREAT for a warm summer day!

To make Tuna Salad - remember this won't be the creamy fatty texture of mayo tuna but lighter and slightly creamy.
  • use a few tablespoons of plain greek yogurt -to taste
  • squeeze in some lemon- to taste
  • dice up some celery
  • dide up a 2 thin slices of sweet onion
  • add salt and pepper to taste
  • to bulk it up more dice up some carrots and red bell peppers too!!!
Cut up a few small (cherry) tomatoes into four and serve on top.

Slice up an avocado for a heart healthy fat.

Veggie Quinoa Soup- Crockpot Recipe


This soup I just tossed together and it turned out delish! Not only is it quick and easy it is super low in fat, a good source of protein and high in fiber!
I searched online and found a recipe that almost perfectly matched what I had done:

NOTE: I used veggie broth and you can pack this with ANY veggies you so desire!

Directions
Put the water in a heavy stainless steel pot, put the lid on it, and place it over high heat to boil.  Rinse the quinoa well and drain. Do this twice with warm filtered water, then set quinoa aside.  Once the water is boiling, add the quinoa, all the veggies, onion, garlic, and ginger. Cover and keep it at high temp. Once its starts to boil again, bring temp down to medium low and let it simmer for 15 minutes. After the 15 minutes, check if the quinoa is cooked.  It should look transparent, thick, and in the shape of a circle with a clef in it (look at picture above).  You don’t want to cook the veggies too much unless the quinoa needs more time. When the quinoa is ready, add the thyme, Celtic sea salt, cayenne pepper, and black pepper. Stir to mix all condiments well in the soup and cover for a minute, then taste. If it needs a little more sea salt, then add it.  Serve and garnish generously with the freshly chopped parsley.

Kristi's directions- throw it all in your crock pot and cook on low all day or high for several hours until quinoa is soft. Use fresh or frozen veggies for a quicker soup.
